Monday Meal Plan



Last weeks menu went very well. It seems that Monday's have become my soup and biscuit day. This past week when going to make my classic biscuit recipe I noticed just below the recipe I had written another recipe for Jiffy Cheese Biscuits. So I decide to make these instead and now they are a new family favorite.

Jiffy Cheese Biscuits
~makes 24 ~

2 cups flour
4 tsp baking powder
4 tsp sugar
1/2 tsp salt
1/2 cup margarine
2 cups shredded cheese
1 1/3 cup water

Combine flour, baking powder, sugar and salt. Cut in margarine (I like to use a fork since I don't have a pastry cutter). Add Cheese and water. Mix well and drop by spoonful on greased sheet. Bake at 400 for 20 minutes.

So whats cookin this week:

Sunday: Pigs in a blanket, home made fries, and banana splits (hubby's cookin)

Monday: Birthday celebration for our friend Weiwei. Last year I made this delicious crown roast; so now I have to try to compete with that.

Tuesday: Mexican Chicken soup with corn bread muffins

Wednesday: Eat on the run. Sandwiches; grilled cheese?

Thursday: Pork chops with winter vegetable casserole

Friday: Out

Saturday: Baked beans

~ Seems now that winter is here we are back to baked beans on Saturday nights!!

Do you have a secret recipe for baked beans that you can make it a meal? I don't think I could convince my family to make a meal out of that one dish.

I'm going to try your jiffy biscuit recipe.

Hi! I want to make your biscuits...but 24 is a lot...which is a good thing! LOL. How do you save what you don't eat? Do you just leave them in a bag on the counter? Or do you freeze them? I'm apparently a little clueless about these things! ;-) Thanks!
