Spaghetti Squash

I can't believe that we are only trying spaghetti squash now!! Where has this secret treasure been my whole life. I had heard so much about it but never really understood its goodness until I tried one. So readers now I share with you so you wait NO longer to try out this delicious vegetable.

First I started with a the spaghetti squash. After giving it a little wash I sliced it in half and took out the seeds from the middle. Inside the middle I rubbed a tad bit of olive oil and placed it face side down on a large cookie sheet that had a tiny bit of water on it. From there you simply pop it in the oven and let it cook for about 1 hour or until your fork can slide in nicely.

While it was cooking I whipped up a delicious pasta sauce starting by frying up onions, garlic and some spinach we had in the refrigerator that wasn't any good for salad any more. Once it was cooked down I add that mixture to my pasta sauce and using my hand blender pureed it so the spinach would not be noticeable.

When the squash was finished I turned it over and filled the middle with the sauce, added some Parmesan cheese and baked for a little longer until the edge turned a nice golden color!

We (hubby and I) couldn't believe how much this was like spaghetti noddles. It comes apart just like spaghetti. Can't you tell from this awesome picture that Micah took!!! It was a BIG hit in the house and we have enjoyed it a couple of times now since our first try! The best part was the spinach in the sauce never affected the taste one bit and I had to tell Micah it was actually in there!

So here is my Kate's Kitchen Question...do you enjoying spaghetti squash and if so how do you prepare it?

We discovered it by mistake around Christmas time (this past year)and was in the same shock you were in. We could not believe how long we had gone without this amazing stuff! We start it out like you did, but used coconut oil, and brown sugar inside instead of sauce. Not as healthy, but VERY yummy! :) We will have to try it with sauce next time! :) Good work!

I love spaghetti squash..unfortunately the rest of my family does not. When I was eating low carb, I came across this recipe and it was super tasty. It's similar to yours, but you reserve the shells after you scoop the squash out and make a layered "lasagna" in them.

I've made spaghetti squash and loved it, but Cory wasn't a big fan so I haven't made it again. I never cut any squash in half before I cook it - too hard! Just stab it with a sharp knife a few times and bake for an hour. Keeps the juices in and makes it so much easier to slice in half once it's done. I love spinach in spaghetti sauce too but have never blended it in, I guess we just like spinach a lot!

How timely for me - I made this once years ago and must have undercooked it because it did not work out. I bought one this past grocery shop, thinking I could make it better this time - thanks for the cooking tips!

I grew up growing and eating spaghetti squash... I LOOOOVE it! We would just bake it (in halves like you did), and then eat it with a little butter and salt and pepper, which is a meal in itself. When Josh and I did a Daniel fast, we would eat it like spaghetti with the sauce - YUM. We haven't eaten much of it recently though, because their price is often way too high. I'm going to keep my eyes open for good prices though, because they are one of my favorite squashes!

They're easy to grow; we've enjoyed them, too! I never thought to put the sauce into the 'bowl' of the squash to continue cooking, just scooped out the squash with a fork and used like spaghetti.

I guess I'll add this vegetable to my seed list for the garden. :)
