Left Over Mashed

I always seem to have mashed potatoes left over whenever we enjoy these for supper so instead of making my husband take a huge container of these in his lunch box I decided to do something with them. I looked on line through many recipes for potatoes cakes and after finding out the main ingredients I decided to give it a whirl.

Recipe
In a large bowl combine about 2 cups of left over potatoes mixed with about 1/4 cup of flour, you need to use this especially when you have milk and butter in your mashed. Then mix in some herbs here is list of herbs that go great with potatoes

Basil
Caraway
Celery seed
Chives
Dill
Marjoram
Oregano
Poppy seed
Rosemary
Tarragon
Thyme

And don't forget to add some grated cheese. Once this is all combined use your hands to form little patties. Flour the patties then place them into a preheated frying pan that has a fair amount of oil in it.


Let patties fry up until nice and golden brown before flipping. It only takes about 5-10 minutes to cook.









I served these yummy little guys along side of my pork loaf sandwich and carrot coins.

  1. Another recipe I just did with mashed potatoes was fish cakes. I took a can of tuna or whatever fish you have mix with potatoes, an egg, flour and spices and fried it up in olive oil. They were awesome...of course with ketchup:)
