Monday Meal Plan

We spent a great weekend home with the family. It was so nice to be home but now it's another Monday we are back in the everyday routine. Here is what's cookin this week in the kitchen.

Monday: Chili and corn bread

Tuesday: Pork chops and potatoes

Wednesday: Stir fry over rice

Thursday: BBQ

Friday: Family BBQ pot luck where I will be making these yummy cupcakes

Saturday: Family Supper (My brother and sister in-law will be home so lots of get togethers!!)

Meal Plan


Two weeks without blogging...I can't believe it myself; where did the time go. I am so sorry that I haven't been blogging as much lately as usual but life has gotten busy. We also got a new computer so I am trying to learn how to get my pictures on here so I can blog with them.

I have also fallen off the pattern of blogging with the nicer weather now but don't worry I am still around and still creating and I have lots to share with you lovely readers. Some times as bloggers we don't think that many people are reading what we write because there are hardly any comments left but its days like last Friday when a wonderful reader announced to a crowd of people how much she loved my blog that makes me jump back on the blog wagon!!

Meal Plan

This weekend is a long week...woohoo no work for hubby tomorrow! We had a great sunny day here yesterday and we spent it preparing the garden! I can't wait to be enjoying all the delicious vegetables at harvest time; and yes I know there is still a lot of work to be done between now and then!

Well readers its better late then never! I am sorry but my poor blog has been neglected this past week! After being spoiled by my mom being here all last week I can barley get into the grove of meal planning again. With the warmer weather I feel like BBQ every meal! hehe...

Meal Plan Monday


I don't really feel like this BBQ man in the picture above. I thought it was almost BBQ season this weekend but we woke to a snow storm this morning, all schools canceled and the weather man calling for 25 cm-30 cm!!

My meal plan is a little late getting posted because we were away this weekend spending time with our friends in Fredericton. So here is my thrown together plan for the week

Monday: Pork chops, sweet potatoes and asparagus

Tuesday: Tasty Lentil Tacos

Wednesday: Left over Lentil mix with rice

Meal Plan Monday

Hey Readers...wow another week has come already. We had such a great weekend enjoying a delicious family turkey supper (lots of pictures to come) with lots of yummy, yummy desserts.

I found some recipes last week for freezer meals that I think will be great for those "suppers on the run". If my energy keeps up I will be stocking the freezer with these treats.

Meal Plan Monday


WOW...March is here already, Its so hard to believe! Today I am sitting here watching Eben play on the floor with a balloon he got at a birthday party last night. Micah is enjoying his Sunday afternoon nap and I am trying to get rid of this caffeine headache I have (didn't get my morning coffee) by drinking a strong steeped tea. The weather station was right once again as its snowing outside and looks like it may not stop any time soon. We enjoyed a delicious spaghetti lupper (half lunch half supper) after church today with some great friends. I just love the crock pot. Nothing like throwing everything together in the morning and coming home to a wonderful smelling house. I don't know how it happened but I am sure glad it did that I have two crock pots. It came in handy today as my large one was cooking spaghetti sauce I used my smaller one to cook up this very delicious hot fudge cake

Monday Meal Plan


Wow...I can't believe how fast the weeks are going by. Soon enough we should be getting some warmer weather. Although hubby and I have decided that even though its soooo cold out right now we are choosing to be thankful for each season. This thankfulness was brought on buy a local business's sign that said...OH I just can't wait for the mosquitoes to come back. Many of you reading from Moncton may remember the infestation of those pesky little guys we had last summer.

So for now I will sick to the snow and say itch free....

Meal Plan Monday


Last weeks menu went really well! I even tried a new recipe for broccoli soup (delicious) that I will be posting later this week. This weeks menu is pretty simple but I have some bulk cooking to do. I need to have some vegetable purees (sweet potato, squash, carrot and potato) made up for the babe. We are having a little bit of a hard time getting him to eat some of the foods we are eating so I figured if I stock up his basket in the freezer at least I will have some foods on hand for him when we are enjoying spicy foods.

Also this week potatoes are on sale so I am going to be doing up some fries and I am thawing out a large pack of hamburger that I will use up tomorrow for my shepherds pie and some meat balls.

Monthly Meal Planning


This month I actually planned my whole month out for meals. What a time saver that was this week since we were out all weekend. This morning I simply had to get the calender out of my house binder to see what I had planned.

For my month of meal plans I simply made each day a theme (Monday Meat/potato and veggies, Tuesday veggie, Wednesday leftovers, Thursday casseroles, Friday take out, Saturday random, Sunday Soup or stew) then under each day I wrote out 4 different meal ideas. Now for the easy part I inserted the meals into my calender to tada...my month is planned!!

Monday: BBQ meat pie and twice baked potatoes

Tuesday: Curried Split peas over rice

Wednesday: Leftovers

Thursday: Sweet and sour sausages

Friday: Toastados

Meal Plan Monday

Please forgive me if my meal plan post doesn't make sense this week but I am sitting at my parents house, with a wood furnace, and I am sure its 30 ++ degrees in here right now. Also I have my husband cheering at the top of his lungs at the TV as he LOVES the super bowl. Its funny cause we don't watch football any other time of year but this special occasion. I don't know if its the Nachos, chicken wings and pop that go with it that makes me even love the super bowl or what...so I will make this quick cause I think the first around of food is almost done!!


One recipe that I made this week to go with my spaghetti pie was these delicious garlic bread sticks found over here at Tammy's recipes.


The recipe was easy to follow, used ingredients all found in my pantry and tasted delicious. The recipe will go into our family favorites.

I will try to remember what I have planned this week cause I am working on a monthly meal plan for this month. I have give each day a theme (example: Monday casseroles) and have written out meals under each theme. Each week I will just pick meals from my list to make my weekly meal plan. Following me?? hehe...I will post my themes and meals for the Month when we get home.

Meal Plan Monday

Last weeks meal plan went so great surviving our week without meat! We were however one musical family after 5 days of beans, lentils and vegetables on the menu! hehe...

We started the week off with a delicious new BBQ lentil recipe I found over at $5 dinners. The next day I wanted to use up some left over baked beans I had in the fridge so I decided to make some MEGA bean chili.

This chili was packed full of beans. I had leftover baked beans in it, the left over lentils and 2 cans of beans. I served it up with some yummy corn bread.

I will be posting about two successful new recipes that I made this past week. One was pizza pockets and the other was crock pot falafels.

We broke our no meat fast on Saturday when hubby cooked up some honey garlic sausages, mashed potatoes and a nice spinach salad. We were suppose to have ribs but I didn't have any honey so we will have to try that recipe another time.

Monday Meal Plan

This is going to be a quick post of our meal plan for the week and who knows if we will get to do it. Today the babe has been sick so we are going to try everything we can NOT to get this flu bug...so here is what our menu will look like for the week and if we do end up getting sick then its ginger ale and soda crackers for us!


Monday: BBQ lentils over rice

Tuesday: Mega bean Chili with corn bread

Wednesday: Veggie Pizza pockets

Thursday: Left overs

Friday: Crock pot falafels in home made pitas with veggie sticks

Saturday: South west ribs with rice


If you didn't notice this week Micah and I are going to try our very hardest not to eat meat or cheese (Saturdays supper is a reward for going 6 days without meat).

Meal Plan Monday


Here is my first meal plan for the 2009 year! But first let me start off by telling you all what we did new years eve. My in laws were up and some good friends in town so we decided to have them over to our place for raclette pizza. Now I am sure some of you are like raclette...what is that. So if you jump over here you can find out all about the special cheese and the machine which is called a raclette machine. We have used our machine for this special type of cheese before but many times we use it to make individual pizzas. Its really fun to do especially when you have company.


Our machine can make 8 mini pizzas at once. So there is a big bowl of mini dough balls (made from my great homemade pizza dough recipe) in the middle of the table. Then there are lots of mini bowls filled with all kinds of pizza toppings. Here are some of the things that were on the table.

Turkey sausages (ground up and out of the casing)
Italian sausage (ground up and out of the casing)
Taco flavored ground beef
Turkey
Pizza meats (ham, pepperoni, salami)
Onions
Red, Green and Yellow Peppers
Pizza sauce
BBQ sauce
Shrimp
Taste of Thai land sauce (for the shrimp)

Also to go along with our pizza I whipped together some homemade garlic fingers. Using my pizza dough recipe I simply covered the dough in garlic butter and mozzarella cheese. Then to dip them I made up some YUMMY donair sauce. Since trying this recipe I can't eat pizza or garlic fingers without this on the menu!!



The recipe is

2/3 cup canned milk (evaporated, and cold, is best)
2/3 cup sugar
1/4 cup vinegar (I would cut this back next time)
1/2 tsp garlic powder

1. Stir canned milk, sugar and garlic together until sugar and garlic is dissolved.
2. Add vinegar and continue mixing. The quicker you add the vinegar and the less you mix, the thicker the sauce is.
3. Let sauce sit in the fridge for about an hour before using.
4. If the mixture separates, don't worry. There is no need to remix it, it will taste fine.
5. The sauce can be made in larger batches. Also it freezes well.


Now that the holidays are over its back to the everyday routine. I have some new recipes that I want to try out and I am going to be making a list of freezer meals. There were many times over the holidays that I wish I would have been able to pick something out of the freezer and pop into the oven. I am not going to spend my days bulk cooking and freezing but I do think that I will make some double batches of things when I do cook! I will let you know how it goes.

Tuesday: Turkey pot pie. I am going to be using this recipe for pile high veggie pot pie and add turkey.

Wednesday: Hubby's birthday party!! Mexican Pile UP, Here is a post from a couple years ago when we had a party for Micah on how to make his favorite birthday meal! OH if you haven't already you should check out hubby's early birthday gift!!!

Thursday: Sausage Marina over pasta

Friday: Leftovers - I may be away

Saturday: I have planned refried bean nachos but I may be on a little vacation visiting my bestest friend for her birthday!!!

Sunday: If I am back and if hubby goes with me then I will make the nachos for supper here

Christmas is this week!!!


I just can not believe that Christmas is here again for another year. Last year at this time I was very preggo and over due just praying for the babe to come out!! Of course he wanted to give Christmas an extra special meaning and decided to make his appearance Christmas morning when everyone else was opening presents. So now Christmas time every year will be a little bit different!!

This past weekend we gathered with hubby's family for our annual gift exchange. This is always a great time together sitting around opening the presents we bought for one another, sipping cider and stuffing our guts with so much food. Its the one time of year that we all splurge on expensive and very delicious cheeses!! I don't know if I am ready to cook after a weekend like that but the family must be feed.

Monday: Sweater Party at the Peterson's. Its a pot luck so our lucky dish will be Mexican Mesegna and I might through together this delicious pot luck chip dip.


Tuesday: Leftovers

Wednesday: Mom and Dad will be coming up and we have been invited out for Jigs dinner (its a Newfoundland thing). I think that after the church service we will come home and enjoy my moms famous taco dip, cheese, crackers and a BBQ meat pie!

Thursday: Turkey Dinner, although I do like Niki's idea of have a big breakfast and then Turkey boxing day but I will have to convince hubby of that one. Maybe next year.

What Christmas supper for us with out Pumpkin Pie!!! Cold pumpkin pie. We aren't ones for hot pumpkin pie, the one year we did try to serve it hot half a piece ended up in grams tea.

Friday: After breakfast we are heading away for the weekend. To enjoy another Turkey Supper on Saturday.

Meal Plan Monday


Another week gone. I can't believe how fast the weeks are flying by. Last week I nailed the egg roll recipe. Thanks to the Dail's for letting me borrow the deep fryer, I will need to give it back ASAP as it is dangerous for us to have it in our house. The recipe made 18 egg rolls and we just finished the last one tonight, sorry to the Dail's for not saving you any...I couldn't stop them (Micah and Weiwei) from eating them.

I will be posting my step by step on how to make these.


This weeks menu is very simple as we are trying to cut back on spending too much this month and we are both involved with the Christmas production at our church. The Nativity Experience will be this weekend so our week is filled with dress rehearsals. This is always a fun time for us as we enjoy being a part of this production each year. There is lots of live stock, cookies, music and of course the message that God gave us the greatest gift of all His Son JESUS!!!

Meal Plan Monday


Hello Readers! I am sorry about the so few post last week. It was a busy week here with lots of Christmas projects on the go; so that is where most of time was spent. Our meal plan went sort of as planned however I will be carrying over one meal from last week. This week I am trying not to buy anything. It's the last week of the month and since we spent a little extra this month on a delicious breakfast out I have decided to be creative (I mean that is the name of the blog right??) with what I have.

So here is what we are cookin up this week

Monday: Pork chops with twice baked tex mex potatoes

Tuesday: Pizza Braid

Wednesday: Left over pizza

Thursday: Soup and jiffy biscuits

Friday: Sausage and Mashed potato

Saturday: Spaghetti with garlic bread (oh ya this was another meal that I am carrying over. Because of the 15-25 cm of snow we got this weekend our guest weren't able to visit.

Sunday: Meeting at the church

Well readers next week we will be in December....its so hard for me to believe my little one is turning one in almost a month!!! I am working on lots of post of frugal holiday shopping (the list has been made and checked twice), crafty and creative Christmas decorations and of course lots of homemade gift ideas. Meal Plan Monday


Although the calendar is reading November the weather here has been so rainy and mild. The crock pot has been out on the counter as least once a week. I just love how I can throw it all in the pot, leave it, the house smells beautiful and we can enjoy a delicious meal as soon as hubby walks in through the door.

This weeks crock pot creation didn't turn out as I had hoped. I followed the recipe for crock pot chicken and Quino, it turned out sooooo mushy!!! I have never cooked with Quino so I am not sure what it was suppose to turn out like but I am telling you it was like pure mush. If any of you have experience cooking with this grain please help me out!

The new recipe I tried this week was such a hit!!!! This veggie pot pie was the most delicious thing I have tasted.




The best part of this recipe (besides the herb combination being delightful) was the sweet potato topping! Oh how yummy this was. When mixing the topping it was kind of a sticky dough so I just placed it on top of the pie and spread it out (to the best of my ability) over the top.


This is the scrumptious end product. After supper it was rated and place on the Peterson Favorite's. I gave it 5 stars and hubby gave it 4; it would have been a 5 if there was meat in it.
