New Brunswick Staycation 2022

 




Welcome to my New Brunswick Staycation guide!!!   I am so excited to give you a great list of places for you, your families and friends to visit this summer.

Welsford falls


This path has a great rope rail to help you navigate your way down to the falls.

Chamcook Mountain 


 The view at the top of this trail was spectacular!  We packed a picnic lunch to enjoy at the top and lucky for us there was a picnic table.  You definitely want to check it out while you are down in Charlotte county. 






And can we just take a minute to bring up the fact that we showed up totally twinning!!!  That is when you know you are besties! hahah.  These amazing workout pants are from Costco.  I love them because of the deep pockets that hold my phone.  Also my top is from Costco and came in a 2 pack.   An important thing to remember about adventuring and hiking is dress in layers and these denim shirts are great for that.  And lets keep the sun off our faces with these hot pink hats and Beautycounter Sunscreen. 







Duck Pound Beach


Such a fun place to walk and explore.  The kids loved flying their kites there and lots of families love to explore the rocks and even enjoy little camp fires.  There are also a few nice walking trails around this beach for older hikers. 









Chocolate Town


Welcome to my sweet little home town of St. Stephen.  There are so many great things to do in this cute community.  


The Five Kings restaurant is located in the old train station.  The atmosphere is lovely, the staff was great and we all enjoyed our food very much! 



The soup of the day (homemade tomato basil) and a crispy chicken wrap was very tasty! 




Tour the front street of this cute community and be sure to visit both the Chocolate Museum and Ganong Chocolatier








You can NOT leave the town without a shopping spree at Spree!!!  This is by far the best boutique around and is owned by an amazing mother daughter duo!!!  




There are two great spots to stop and enjoy ice cream when visiting this boarder town.  The Oakbay Snack and Dairy Bar and Scoops. 









Saint John


Irving Nature Park offers a variety of trails, the ocean, beautiful scenery, and places to picnic!!!    It is right off the highway so if you are on a long drive it is a great spot to stop and stretch those legs. 



WoodChucks


When are family is all home we love getting out (as couples) to do something fun together!!!  
Woodchucks axe throwing was a very entertaining evening!  It's located uptown in Saint John which made it very easy to hit up any restaurant afterwards! 



Area 506

 This is a great spot to go with some friends, or a hot date, to grab lunch and do a little shopping.  They have some great evening events as well that are worth checking out. 



Q-plex

Hit up your local swimming pool for  a fun afternoon!!!   I try to do this at least twice a summer.  I love watching the kids slide down the water slides and swim with their friends.  


The Fundy Trail 


On your way to the Fundy Trail you MUST stop at the ShipYard Cafe for a hot drink (I love a good coffee in the morning, an ice coffee in the afternoon and a Fundy Fog in the evening) and a delicious baked good.  





This year we got a 5 day pass to the Fundy trail to try to explore more parts :)  Here are a few of the fun things you can see there.

St Martins


After a busy day hiking the Fundy Trail we LOVE to stop at St Martins to enjoy supper at the CAVES restaurant, personally the sea food platter and fish and chips are family favourites. 




Stopping at Octopus Ice Cream for a delicious treat was the perfect way to end our lunch date.  


It smelt heavenly in here as they were making their famous homemade waffle cones. 


They had so many choices for ice cream (both hard and soft) also you can enjoy floats, sundaes and banana splits. 






I am very excited that this summer I will be enjoying a night away at the beautiful Pinewood Escapes which is only a 15 minute drive away from all my favourite things in St. Martins!   If you are looking for a little getaway on a private lake with paddle boards and a hot tub, this is the place for you! 












St Andrews By the Sea




Enjoy exploring the Ocean floor at low tide with the family! 




There are so many delicious restaurants to eat at!   I am a lover of sea food, especially Lobster rolls and this one did not disappoint. 




While visiting this beautiful community you MUST treat yourself to a Tall Toms homemade Lemonade or a Sussex ice cream cone!  



Honeybeans Coffee Shop is a MUST stop !!!  The Salty Maritimer Latte is my FAVOURITE and really you can't go wrong with any of their baked goods. 







This place is so beautiful in every season!!!!  It's family friendly, romantic get away friendly and mamas weekend away friendly!  







The outdoor and indoor pools are great for relaxing in and they offer lots of extra activities to enjoy. Like renting a bike, outside camp fire pits, a beautiful wrap around deck to enjoy dining on and lots of fun lawn games. 





Be sure to to enjoy a meal at the Braxton's Restaurant located on site because the food is delicious!!!  








St. George 

One of my favourite beaches is located here!  Canal Beach is a beautiful sandy beach, the water is clear, there is are swings and a small volley ball court. 







If you are in this area YOU MUST stop by Petes Dairy Bar for ice cream!  





A special treat down here is sea glass beach!  It's definitely a place you want to explore. 










The Green Pig Country Market


The New Brunswick Sunflower Festival was absolutely breathtakingSunflowers are my favourite flowers!!!  They were my wedding flowers 17 years ago when we got married so I have had this festival on my bucket list for a few years and it did not disappoint!!!  I am happy that just Micah and I went there together cause I don't think the kids would have appreciated it like I did.  



There were so many photo opt stations set up it was an Instagram dream ;)  And with your admission you got to cut down a beautiful flower to take home. 





In September (which is technically still summer) they have the BEST corn maze!!!  I actually can't believe how muddy it was in there....a few shoes got very stuck, but we made it out and every one had a lot of fun!  They have a lot of activities for elementary aged kids to do.  You can enjoy a picnic lunch there and try out the pumpkin blaster!!  




Moncton 


Moncton has a lot of fun things to do.  Defiantly try to get in a visit a the Moncton Zoo






Any time you are driving by Sussex you seriously need to get off the high way and head to Jones General Store for the BIGGEST ice cream scoops ever!  Can you tell I know where all the good ice cream places are?  hahah





New River Beach 


Seriously this beach is one of my favourite places to go in the summer months. The most beautiful beach and great camp ground.   Good friends of mine usually grab pizza from the local Pizza Hut shop out there and even enjoy supper on the beach.   We did this for Fathers Day this year and it was amazing.  We spent the afternoon on the beach, then changed up to play at the play ground and enjoy pizza with a beautiful view. 













This beautiful place is mintues from New River Beach and definitely worth the stop in to see it.  








Shamrock Suites 



Spending the night in a train car...yes please.   Adventure on the rails has everything you needed.  Encompassing an entire train car, with two double bunkees, one queen bunkee, a kitchenette with continental breakfast, a private bathroom and a sitting area with games!!!  


Here are a few things to do while you are in that area of the province. 


Make a trip to Hartland to see the World's Longest Covered Bridge


And please have some flannel packed up so you can swing by the World's Large Axe 



Touring Covered Bridge Potato chip factory is one place I want to get to this summer!  How fun does it look. 



Shediac


Biddington's Hideway is the most AMAZING getaway!!!  WE loved it so much we are booked to go back this year !!!










This was the BEST spot for our annual staff retreat, we call it!  Where we goal set for another year, take time to connect just the two of us, have fun together and of course do a lot of eating out!  




We picked up delicious baked goods from La Boulangerie Leger Bakery



Route 66 is a small little diner but it had the BEST lobster roll !!!  




Captin Dans is located on the wharf so we ate outside on the patio to enjoy the stunning view. The Lobster burger was a hit for me!  





Nothing better than enjoying great food by the ocean!!!  Love that this restaurant  is located right at Parlee beach!  The lobster roll, fries and burger were VERY delicious. 




And enjoy a doughnut ice cream sandwich for dessert! 



Aboiteau Beach was by far my favourite experience.  I don't know if it was that it was a very HOT summer day (thank you heatwave), or that the water was so warm (we aren't use to that here) or the fact that it was just the two of us, but whatever it was this beach is AMAZING!!!

Easter Bars



These Easter Egg bars are so delicious. They are the Hello Dolly or Magic Bar recipe with an Easter twist.  

Ingredients

2 Cup graham cracker crumbs

1/2 cup melted butter

1 cup chocolate chips (semi sweet or milk chocolate)

1 cup crushed mini eggs

1 cup chopped pecan 

1 cup shredded coconut

1 can of sweetened condensed milk

Easter Sprinkles


Steps


  1. Line 9x13 with parchment paper and preheat oven to 325. 

  2. Melt butter and stir into the graham cracker crumbs until evenly combined. 

  3. Press mixture into the lined baking dish

  4. Evenly coat the crust with chocolate chips, crushed mini eggs, chopped pecans and coconut.

  5. Drizzle the sweetened condensed milk evenly over top.

  6. Sprinkle with Easter sprinkles. 

  7. Bake for 25-30 minutes until the edges are golden brown and the middle is bubbly.  

  8. Let cool (in the refrigerator or freezer) until set to make cutting easy.

Chocolate and Peanut butter cookies

 


This combination is my absolute FAVOURITE!!!! And these cookies are delicious. Next time you see this bag of Reese's Chips be sure to grab it and make these cookies!


Chocolate peanut butter cookies

1 1/4 cup softened margarine
2 cups white sugar
2 eggs
2 teaspoon vanilla
2 1/2 cups flour
3/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups Reese peanut butter chips
Cream butter and sugar until light and fluffy. Add eggs and vanilla, mix well. Combine flour, cocoa, soda and salt blend into creamed mixture until combined. Stir in chips.
Bake in preheated 350° oven for 10 minutes.

Chicken Noodle Soup

 



I love love love a hot bowl of delicious chicken or turkey noodle soup.  I have looked for many years for the most delicious recipe and I believe I found it in this recipe.  Its so flavourful and pairs very well with a fresh batch of tea biscuits.

Chicken Pot Pie!

This is the MOST delicious chicken (or turkey) pot pie!!!  


Chicken Pot Pie

¼ cup butter

¼ cup flour 

1 cup milk

½ cup boiling water

2 OXO chicken cubes

½ tsp salt

¼ tsp pepper

2 ½ cups cubed chicken 

2 cups cooked carrots

1 cup cooked peas


Start by melting your butter in a medium size pot on the stove. 

Once melted add in your flour and whisk in your milk to make a white sauce. Dissolve oxo cube in boiling water and add to the white sauce. 

Add salt and pepper. 

Bring sauce to a boil and reduce to simmer for 5 minutes. 

Add in chicken, carrots and peas.  You can add more salt and pepper to taste. 

Then take your filling add it to a deep dish pie crust.  I use Pillsbury Pie crust. 

Once the filling is in the bottom crust, lay your top crust over, seal and bake at

400 for 30 minutes.


* my dishes are not very deep so this filling did 2 pies for me.

Crispy Baked Onion Rings

 



These crispy baked onion rings make the perfect side dish for our summer menu!   

1 cup flour
1Tbsp (A&W seasoning- you can buy it at their store)
1 1/2 cup Panko
1/2 cup parmesan
2 Large onions, sliced in rings
2 large eggs, beaten

Preheat oven to 400. 
Line a cookie sheet with parchment paper and lightly oil (or I use cooking spray) it. 
In a large bowl combine flour and A&W seasoning and set aside
In another large bowl combine panko and parmesan
An lastly have your 2 beaten eggs in another bowl. 

Working in batches.  Dredge the onion rings in flour, dip in egg, coat in panko mixture. 
Spread the onion rings in even layers and bake in oven until golden brown 20-25 minutes.

Delicious Easter Treats




Easter week is here and I am sharing with you 7 of our families favourite Easter treats!!!!  

We kicked off Easter week by matching a delicious batch of little cotton tail pink and blue bunnies.  We use our favourite sugar cookie recipe and dyed the dough with Wilton's Icing Gel Food Colouring.  When the cookies have cooled pipe on a cute little bunny tail (with buttercream frosting) and sprinkle some of the tails with coconut. 



Next these no bake bird nest are so fast to whip together and require NO baking!!!!!  
 



Individual mini egg cheese cakes are a perfect way to end off that Easter Supper! 





I feel like you can't celebrate Easter (and Spring time) without the delicious combination of carrot cake with cream cheese frosting.   I like to topped these with toasted coconut and Easter themed M&Ms. 




My amazing sister in law introduced these delightful Sweet Homemade Crescent Rolls to our Easter menu (and Christmas) and we WILL NOT GO BACK!!!  They are so yummy and the perfect treat to add to our Easter meal.   



These Easter bars are the delicious Hello Dolly square recipe with mini eggs and Easter sprinkles added in.  



And last but not least the perfect Sweet and Salty Easter popcorn.  We can't get through the Easter season without adding mini eggs to our buttery popcorn.
